Bacon, tomato and basil omelette
We had leftover spaghetti a la carbonara from last night’s dinner and I was planning on reheating some for today’s school lunch. But my 13-year-old daughter does not think lunch is lunch unless it is rice and a meat, fish or vegetable dish. She is so Pinoy in that sense… unsatisfied without her daily dose of rice. The reheated spaghetti a la carbonara became breakfast and, with the little time left before the school bus arrived, I cooked an omelette with bacon, fresh tomatoes and basil.
Flavorful, highly aromatic and so simple to make. The omelette was ready in minutes. I only made one–just one packed lunch since it’s final exams week for my 12-year-old daughter (she’s graduating from grade school) and she will be home by lunch time.
Here’s how to make a single serving of bacon, tomato and basil omelette.
Ingredients :
1 egg, beaten
3 strips of bacon, diced
1 tomato, seeds removed then cut into 1/4-inch cubes
1 shallot, chopped
a tbsp. of chopped fresh basil leaves
a pinch of salt (optional)
pepper
1 tsp. of olive oil
Cooking procedure :
Heat the olive oil in a nonstick saute pan. Add the bacon and cook for about a minute. Add the chopped shallot, basil and cubed tomato and cook, stirring, for 30 to 45 seconds. Pour in the beaten egg and sprinkle with salt, if using, and pepper. Cook until set. Fold or flip the omelette, if you wish, to ensure even cooking.
That’s it! Delicious. I had a teeny-weeny bite before the omelette went into my daughter’s lunch box.
