Brownies, meat loaves and a Pinoy Cook inspired Christmas menu
That I’d find dishes cooked from my recipes on my family’s Christmas dinner table is nothing out of the ordinary. But to learn that someone cooked a Christmas dinner consisting of six courses, four of which were inspired by recipes from this blog, is really humbling. And it tickles me pink. A long-time reader sent the photo above accompanied by the following note (I supplied the links):
“Hello Ms. Connie,
First of all, I would wish to thak you for inspiring and bringing out the “cook” in so many [I think Renato meant "so many people" -- Connie]. Reading the many many comments in your site just simply proves that indeed you have changed the lives of so many people.
I am Renato San Mateo and I have been an avid fan of your website for the past few year’s. I must admit that most of my daily menus are taken from your site. It saves me the time and effort of having to think of what I will cook next and a recipe from your site is always a sure hit!
Last Christmas 2008, the menu I prepared together with my sister-in-law was almost entirely inspired by your website:
Rellenong Manok in the round glass platter (I omitted the hard boiled eggs)
Fish Fillet with Garlic Mayo Dip in the fish shaped platter
Baked Sweet Ham
Baked Potato Wedges with Rosemary and Olive Oil in the rectangular pyrex dish (taken from your recipe which accompanied the roasted pork loin)
Spicy Beef Caldereta in the brown clay casserole
Refrigerator Cake (not in photo – was still chilling in the ref)
Everything was a big hit!”
Thank you, Renato, for sharing that with us. It’s almost like I was at your Christmas dinner.

Next, we have something dark and sweet and, I have to concede, totally decadent — in a delicious way though. Doddie Householder transformed my chocolate fudge brownies into cupcakes…

… and loaf cakes! Doddie says in whatever shape or size, they were great. Nice twist, Doddie! Thanks for the photos.

The meat loaf photo above was sent by Evelyn, who wrote:
“I had been an avid fan of your blog since 2005 when I and my husband arrived in UAE. Same as the others, I had no knowledge of cooking, thank God I found your site, and whatever your menu for the day, that is what you will find in our dining table.
Anyway, one of my favorite blog of yours is “I said it’s not a cake!”. I really enjoyed that one, but eventually become sad when I found no recipe. And as you had mentioned, it is just like our very own embutido. So let me share with you my Meatloaf, inspired by your Beef Embutido recipe but cooked in a meatloaf way. I just added Catsup and brown sugar for the glazing.”
Like Doddie, Evelyn used a recipe but formed and served the dish in an entirely different way. I like that. Retain the substance but give the format a new twist. Thanks, Doddie. And let me assure you that your meat loaf doesn’t look like a cake.

I have to agree on what everyone has said! This site is great!
Last Christmas noche buena was also a despedida party for me. My sister and I did the cooking and of course, almost every meal, we got it from this site. The receipes are easy not to mention that the ingredients are easy to find. Thanks Ms COnnie! Actually, I had been surfing the net for pinoy cook for I think almost two years. Probably, I have tried all the recipes. And I must say that all are a hit to our family. SUddenly, I was turned into an expert when it comes to cooking.hehehe! Thanks a lot.
I’m looking forward for more new recipes from you. Im out of the country now that’s why I was not able to cook a lot lately. But once I get back, please expect that I’ll be one of the everyday visitors of this site. Thanks and more power!

It’s neat to see my cupcake brownies and loaf brownies on your site. I want to thank you for the recipe, it’s a keeper. Today, one of my hubby’s co-teachers celebrated her birthday and I gifted her with a tray of your brownies.
She said that it was so good that she was going to move in with us the next day. Just to tell you, your recipes are rocking here in Korea.
