Buko (coconut) juice and strawberries smoothie

Discovering a pack of gelatin in the pantry yesterday, I sent the house helper to the market to buy six coconuts so I could make buko pandan for dessert. I reminded her to make sure to bring home the coconut juice as well. The buko pandan has been appreciatively consumed but the coconut juice stayed in the freezer overnight.

Now, I also happened to have some fresh strawberries in the fridge. I had been planning on making strawberry milkshake, then, I thought about the coconut juice. As of this afternoon, it was in a semi frozen state — perfect for making shakes. Milkshake is common — how about combining the coconut juice with the strawberries? The result was amazingly delicious. Not as rich and thick as a milkshake but light and refreshing — just perfect for an afternoon drink.
Trim about 150 grams of fresh strawberries. Cut them into halves or quarters if they are rather large. Place them in the blender and add the frozen coconut juice. Pour in enough liquid coconut juice to about two inches from the brim. Add about 1/3 cup of sugar and run the blender on high until the mixture is smooth. Makes enough smoothie for six people.

I have frozen non-fat coco milk, the stage just before the separation of the VCO from the milk. Going to La Trinidad tomorrow. Should be a good drink after day’s work. The drink may end up in the creamy level between the coco juice and the milk shake level….sarap, even just imagining

Will try…this would be a hit with the during summer! Have you tried using buko juice instead of water for making the gelatin/gulaman for buko pandan? yummy…

read this post at work this AM,went home headed directly to the kitchen to prepare this…
i used Pamana frozen coconut with juice and thawed
it in the microwave for about 2 min and frozen
strawberries(8 pieces,not thawed)….put in the
blender,press ice crush then blend..no sugar
it is only one glassful because i don’t have enough buko juice…soooo good!!! why wait for summer
