Butter – fried fish and corn

This recipe is good for two persons.

Ingredients :

about 300 grams of fish fillet
salt and pepper
1 small onion, coarsely chopped
3/4 c. of well-drained (canned) corn kernels
5 tbsps. of butter

Cooking procedure :

My fish fillets were about an inch thick. I cut them into chunks about 2 inches wide and 2 inches long. If your fillets are thicker, about 1-1/2 inch cubes might be a better size. The idea is to cut the fillets into a size that will allow them to cook in just a little butter for a short time. If they are too big, they might not cook through.

So, cut the fish fillets then season with salt and pepper. Leave for at least 10 minutes to allow the fish to absorb the seasonings. With the small size of the fish, ten minutes are usually enough.

Melt the butter in a frying pan. You may need to use more butter if you’re not using a non-stick pan. When the butter is hot, add the fish in a single layer and cook over medium-high heat, turning them over for even cooking. When the edges start to brown (they will in a rather short time), add the chopped onion and continue cooking until the onion pieces soften and their edges start to brown as well.

Add the corn kernels. Stir so that most of the corn touch the bottom of the frying pan. Cook for about 30 seconds of just until the corn kernels are heated through.

    Your fish looks so good and tasty! :razz: Let’s just say my mouth is watering! lol I love fish, but my hubs is not a fan of it. So I don’t cook it here @ home @ all. The only time I can eat fish is when I’m visiting family and they happen to have fish being served. So when fish is not being served @ the table anywhere I am going.. this is my next best thing to eating it. lol I’m admiring the yummy looking fish and I wish I could just reach out and grab some right outta the computer screen. Tita Con, you take such great pictures!! Every picture makes me wish I could reach out and have a sample po. lol :grin:

    Fridays here in Poland is strictly no meat. It is a long time catholic tradition here. So, I have to think what non-meat recipe to cook on a friday. Besides the fact that, my hubby is not a vege eater, i really have to think of a possible menu that willl he will surely eat. If I cook veges I have to add some meat on it or hide the veges on the meat. When I found your site it was a great help.
    I tried this recipe today, and it was a hit in my kitchen. My hubby likes it so much. Surely, he will request this recipe over and over again on fridays. :razz: It’s a good one for lent too.
    Kudos to your site..you are truly an inspiration.
