Chicken and asparagus fried rice

Ciao for now! ~ ConnieWe were having longganisa for lunch but I was worried about the leftover roast chicken going to waste. The thing is, the leftover chicken could have only fed one person and there were four people for lunch today. So I made good use of the chicken by stretching it.

The meat from half a chicken breast was all the meat that this asparagus fried rice needed.
Serves 4.
Ingredients:
4 to 5 c. of cold cooked rice
meat from half a breast of roasted chicken, roughly chopped
a bunch of baby asparagus, about 12 pieces, cut into 2-inch lengths
2 eggs, lightly beaten
2 to 3 tbsps. of vegetable cooking oil
salt
pepper
1 tbsp. of toasted garlic bits (see related entry on how to prepare toasted garlic bits for garnish)
Heat the cooking oil in a wok or frying pan. Pour in the beaten eggs and cook until just set but still wet at the center. Scoop out with a spatula and transfer to a chopping board.
In the remaining oil, add the chopped chicken and cut asparagus. Cook over high heat, stirring, for about 30 seconds (asparagus cooks really fast and the chicken is already cooked and just needs to be reheated).
Add the rice. Season with salt and pepper. Cook, stirring often, until the rice is heated through.
Meanwhile, roll the cooked eggs and slice finely.
Turn off the heat, add the eggs and garlic. Toss to distribute evenly.
Serve at once.

still have not tried using a dash of kecap manis for your fried rice? will give the usual fried rice a new look and taste.
I can’t even find kecap manis in any supermarket for months!
makes me hungry just by looking at the picture..Yum. Since my weekend baking and cooking plans were derailed by the demise of the airconditioning unit of half of the house i will have to just look at these gorgeous pictures of a home cooked meal… unless you can send me some by DHL.hehehe.

I used to do the same Ms. Connie, specially for fried chicken, pag kasi tumigas na sa ref khit pa i-micro di na masarap pero pag hinalo mo sa fried rice…your family wont even know that the chicken in their fried rice was the one that they actually ignore.
