Ingredients :
3 chicken thigh fillets, cut into strips
a bunch of baby asparagus, cut into 2-inch pieces
2-3 cloves (segments) of garlic, finely minced
half an onion, chopped
1 egg, beaten
2-3 c. of cold cooked rice, mashed to separate the grains
2 tbsps. of vegetable cooking oil
1 tbsp. of chopped onion leaves
salt and pepper
Cooking procedure :
Place the chicken strips in a bowl and season with salt and pepper.
Heat the cooking oil in a skillet or frying pan. Add the egg and cook until the underside is lightly browned. Flip to brown the opposite side. Lift with a spatula and transfer to the chopping board. Roll and cut into very thin strips  as thinly as you can manage.
In the remaining oil, add the chicken. Cook over high heat until the edges start to brown. Add the garlic and chopped onion and cook, stirring, for about five minutes. With the chicken cut in such small pieces, it won’t really take that long to cook them. When the chicken is almost done, add the asparagus and cook for a minute longer.
Add the rice. Season with salt and pepper. Cook, stirring, until the rice is heated through. Add the cooked egg and stir a few times. Turn off the heat, add the chopped onion leaves, give it a final stir and that’s it. Your chicken and asparagus fried rice is ready for the kids’ lunch boxes.

very, very healthy!
i wish im good in making fried rice. mine always end up looking like kakanin, you know very sticky and all.
paupau, if you intend to make fried rice from leftover rice, when you cook the rice (the original cooking) use less water than usual. Pag malata yung saing, it doesn’t make for good fried rice.
thanks for the tip!
asparagus is not that expensive now, so i’ll definitely do this soon!
Hi! This looks like a delicious recipe. I love fried rice, too. I read somewhere that refrigerating the rice before cooking will prevent the grains from sticking together, if you’re using left-over rice.
you’re cooking ideas are really brilliant!
this is so easy to prepare! just in time for tomorrow’s breakfast, hehehe. i bet it’s gonna be a fantastic.
yah, ces, very reasonably priced. when they’re cooked just right–yung crunchy pa–naku, ang sarap.
Yes, Lani, cold cooked rice is best. But if the sinaing is malata to start with, refrigeration won’t help.
enjoy, phynkee. no leftovers from the kids’ baon on july 28th hehehe
I’m always a fan of yours Connie. And this one is brilliant and simple. No need to spend so much time in the kitchen chopping and all that just to have a nice breakfast
.
God bless you always!
thank you, prosinger.

plan B is my garlicky fried race with Nickolodeon on full blast
the veggies am still working on it
I cook fried rice from time to time as this is the most easy meal to make. I guess I must have used a bit too much soy sauce so normally it turned out quite dark. Maybe I should try not to use any soy sauce and hope that it will turn out like yours.
As you may know, the other easy meal you could make for your kids would be chow mein. I made some recently: http://www.windyscorner.info. I’m also not a morning person but I believe that it is worthed to get up early to make something nice for your kids. Keep up the good work!
thanks sa new recipe hahaha… natututo na kong magluto…
richard re working on the veggies, kaya mo yan!
Hi Windy, you got some great recipes there.
congrats, honey! enjoy, right?
yeah enjoy talaga.. again thanks i made cooking so easy .. cant believe na marunong na ko ngayon thanks god bless..
Hi Connie,
My fried rice slim version is lamig na kanin, garlic, onions, a pinch of salt, black pepper powder and curry powder. Minsan nilalagyan ko ng oregano which I grew and dried myself.
My children who are all adults tell me its yummy.
But I am sure I would try your recipe too, kasi alam ko masarap sya. Kaya lang bawal yata saken asparagus. He!he!
Cheers! And thanks!
honey, you make me happy.
malou, you might want to try my garlic, basil and onion leaves fried rice.
Oh, thank you for pointing back to your garlic, basil and onion leaves fried rice recipe! I just got a new basil plant and am definitely going to try that out.
yung long grain, joey, maganda sa fried rice.
no problem, M, hope you enjoy it.
o, ann, di ba enjoy magluto?
yep! sarap magluto! enjoy mamili ng ingredients..
ngayon ko lang napansin dami ko palang typo dun sa unang comment ko.. excited eh..
Hi tried this.
I loved it. A just made some alteration. Like, I steamed the asparagus 1st .. ang sarap kasi parang juice siya sa loob tapos crunchy sa labas. I used left over chicken joy in the ref.
Grabe sobrang natuwa kami ng asawa ko. We tasted it before packing it as lunch. After tasting sabi ng husbad ko. Siksikin mo baon ko ..
LOL @ Greys. “Siksikin mo baon ko.” Bago yun ah. Nakakatuwa naman at nagustuhan n’yo.
