Chicken and potatoes with creamy cheese sauce
I always thought that when my kids go to college, the days of packed school lunches would be over. That, of course, was based on the assumption that my kids would commute to and from school and would be home for dinner every night. I did not count on the possibility that one, or even both, would have to live away from home during schooldays and we would only get to sit down to dinner as a family during weekends.
If you’re not a reader of my other blog, let me explain that my firstborn is now in college and she stays in a rented condo during weekdays. Until she becomes more familiar with eateries in the area, I pack five sets of dinner for her every week that she can reheat in the microwave oven.

We drove her to her condo last night and one of the dishes she brought was this chicken and potatoes with creamy cheese sauce — a simpler version of the baked creamy chicken and potatoes dish I’ve done in the past. I omitted the onion which can hasten spoiling, used skim milk instead of cream to even prolong shelf life and, instead of baking I simply cooked the dish on the stove top.
This recipe serves 2.
Ingredients:
4 to 5 chicken thighs
2 potatoes, peeled and cut into wedges
2 tbsps. of butter
salt
pepper
1/2 c. of skim milk
cheese (any kind), sliced, crumbled or grated

Melt the butter in a frying pan. Cook the chicken until lightly browned, turning them over to brown both sides evenly. Add the potatoes and continue cooking until the edges of the potatoes are slightly browned as well. Season with salt and pepper. Pour in a cup of water and simmer for 20 to 25 minutes after which, most of the liquid should have evaporated.

Pour in the milk and add the cheese.

Cook over medium heat, uncovered, until the cheese melts.

Stir the melted cheese into the sauce. Simmer for two minutes longer then turn off the heat.
If you plan to prepare this dish and pack it in a lunchbox, I suggest that you cool it a bit before sealing the container.

I’ve read about that. Microwave cooking with plastic is not advisable but reheating is not so problematic.
What a fantastic convenient idea! I normally grate the cheese over whatever it is I’m cooking but this is easier. I’ll try this for husband’s pack lunch this week.

Yes, you can substitute. Pearl onions or button mushrooms are good choices though I wouldn’t suggest anything that contains too much water. And, yes, any variety of cheese will do.
Thanks! I tried this and it was delicious! I kept in mind what I read before in one of your older entries not to put too much salt as we can add but we cannot remove. I think I was too impatient though as there was still a lot of water before I added the milk. Therefore, the chicken was a bit undercooked. So I compensated by simmering longer after I put in the milk and cheese. Viola, cheese in bottom of pan. But anyway, I still loved it. This is a simple recipe, easy to cook and integrates a lot of things I like to eat

This dish turned out to be a one pot wonder. I just added more potato wedges since my kids love potatoes and served this for dinner last night with a side salad and ciabata bread with sun dried tomato pesto. The kids told me to keep on reading your sites since i had been coming up with some new surprisingly delicioso dishes that taste better than Macaroni Grill’s. The only suggestion they have is to add more broth(milk and cheese) because they really liked mopping the bread in it. Thanks again Connie.

I tried this recipe and it was a blockbuster! I will do a variation next month and try to take a picture or two before setting it on the table so I can it to you. The first one was down to the last piece so I was unable to take a picture anymore. Imagine, half kilo of chicken was eaten by 2 preschoolers and a toddler in one big lunch! Nothing left for me and my husband.

- the sauce ended up too thick (much like only melted cheese was left). should i have added the milk and cheese earlier? im not sure what you meant by “most of the liquid should have evaporated”.
- don’t i need to put a little salt to the chicken before i put in butter? i’m afraid na baka mawalan ng lasa esp when i put bigger pieces..

The sauce is supposed to be thick. Add the milk earlier and it will curdle.
The reason the chicken is first cooked in butter is to sear and seal in the juices. Add salt before browning and the water in the chicken gets drawn to the surface and you just negate the purpose of browning and searing.
Just finished eating dinner, cooked this dish and my 9 year old son loved it!!! yehey. Although i skipped the butter and used olive oil kasi i have a heart condition.
Yum Yum. And Its really easy to follow. I don’t know how to cook actually there was a time i cooked my son looked for hotdog … hehehe

Thanks for this recipe! My husband and daughter loved it. May additional luto na ko para pang baon ng anak ko sa office. It’s a sosyal version of chicken in pineapple or gisantes. Just cooked it yesterday for her baon kanina.

I tried this recipe last night and it was very good. My hubby said it is something he will enjoy having again. The only cheese I had at home was a Mexican blend of shredded Monterrey Jack and Cheddar cheese. Next time I will try it with a different kind of cheese, maybe Blue Cheese or Swiss. Eden has too much extenders. I don’t think it’ll yield a creamy sauce. And I don’t know what’s available in London. I use Land O’ Lakes… if you can find it there.
