I have this still unopened pack of paper cups that was gathering dust at the back of one of the kitchen cabinets. I discovered it as I was reaching for a mixing bowl. On the backside of the package was a recipe for banana muffins with a topping similar to that found in streusel cakes.

We had no bananas but I figured I could still bake some muffins for the kids’ school recess using canned corn. I didn’t think the topping would go well with the corn so I ditched that. Then, I simply substituted corn for the bananas.

I baked the muffins before I cooked the butter-fried fish and corn for the kids’ school lunch. In fact, I decided on the butter-fried fish and corn because there was still leftover corn after baking the muffins.

    I love muffins! I think that is one of the easiest of baking aside of pancakes. Next time Tita Con’s try to use cream corn and cheese…u will be surprise ;)
    Btw last night I cooked grilled breast chicken on mustard n herbs partner with asian fried noodles salad…whatever you could call it…then while I started eating ….I realize, hmmm why i forgot to share this to Tita Con! And still trying to organize my plate if I could still make it looks better. My hubby starting to laugh at me coz of it! But promise next thursday or friday when I make this asian fried noodles with chinese cabbage I will send you some pictures. Its really simple and very nice partner for fried foodies.

    Hush, you know… I think you’re a potential food blogger. Why not start one so you can share your ideas as well. :smile:

    bing, steaming will make muffins more like puto. muffins have a crusty exterior and you can’t achieve that unless you cook them in dry heat.

    hi connie!!! another yummy recipe…..but i will try the fish fillet with corn first, i love corn and kaya kong ubusin yung isang can ng corn kernels sa isang upuan lang while watching TV

    just like Hush, yung hubby ko is telling me also to take some pics nung mga recipe na galing sa iyo.. alam nya kasi na adik ako sa pinoycook…. heheheh maybe someday…..

    The corn muffins looks tasty! When I make corn muffins or corn cakes(more like corn pancakes because they are flat like pancakes) I mix in some chopped scallions or chives or chopped green chiles, cheese or even add julienned pieces of ham to make them more savory. I don’t add in each of those ingredients altogether, but vary it depending on what I have on hand or what I fancy @ that moment.

    Aloha, I like the idea of corn and ham. :) And cheese and chives. Wow, all the wonderful combinations with the basic muffin recipe. My kids will love them. :)

    hi ms. connie! i was just wondering what else you could use aside from corn and banana for the muffins. would like to make blueberry muffins from scratch instead of a mix but i obviously won’t be able to get fresh/frozen blueberries. im not really sure if i can use the canned variety (the ones for pie fillings) as i know the recipe would have to be adjusted accordingly. would you know how to work this out?

    I Just tried to baked this recipe and my husband loved it! He’s asking me to baked a muffin for him again….thanks for that wonderful recipe. BTW just want to ask if I got the right texture of the muffin is it really “malutong” outside then soft and moist inside? Just curious. Thanks again :-)
