Corn muffins

Ciao for now! ~ ConnieThe following recipe makes 8 regular-sized muffins.
Ingredients :
1-1/2 c. of flour
1/4 tsp. of salt
2 tsps. of baking powder
3/4 c. of sugar
1/3 c. of melted butter
1 egg, lightly beaten
1 c. of well-drained (canned) corn kernels
Bake the corn muffins :
Mix together the flour, salt and baking powder.
Mix together the melted butter, egg and sugar.
Add the corn to the flour mixture and stir well to coat the corn kernels with flour. Add the corn-flour mixture to the butter mixture and mix just until moistened. Do not overmix. The batter does not have to be free from lumps. In fact, it should be quite lumpy.
Line a muffin pan with paper cups. Or don’t. You don’t really have to. I normally don’t use paper cups when making muffins. I only did so in this case because the muffins were meant for the kids’ school recess and the paper lining would make it more convenient for them — less oil on their fingers.
Use a spoon to fill the paper-lined muffin pan until 3/4 full. Bake in a preheated 175oC oven for 20 minutes. Cool for about 5 minutes before removing from the pan.

I love muffins! I think that is one of the easiest of baking aside of pancakes. Next time Tita Con’s try to use cream corn and cheese…u will be surprise
Btw last night I cooked grilled breast chicken on mustard n herbs partner with asian fried noodles salad…whatever you could call it…then while I started eating ….I realize, hmmm why i forgot to share this to Tita Con! And still trying to organize my plate if I could still make it looks better. My hubby starting to laugh at me coz of it! But promise next thursday or friday when I make this asian fried noodles with chinese cabbage I will send you some pictures. Its really simple and very nice partner for fried foodies.

bing, steaming will make muffins more like puto. muffins have a crusty exterior and you can’t achieve that unless you cook them in dry heat.

The corn muffins looks tasty! When I make corn muffins or corn cakes(more like corn pancakes because they are flat like pancakes) I mix in some chopped scallions or chives or chopped green chiles, cheese or even add julienned pieces of ham to make them more savory. I don’t add in each of those ingredients altogether, but vary it depending on what I have on hand or what I fancy @ that moment.

hi ms. connie! i was just wondering what else you could use aside from corn and banana for the muffins. would like to make blueberry muffins from scratch instead of a mix but i obviously won’t be able to get fresh/frozen blueberries. im not really sure if i can use the canned variety (the ones for pie fillings) as i know the recipe would have to be adjusted accordingly. would you know how to work this out?
