Custard pudding with mango jam

If you’re wondering what I did with the bread crusts after I made my smoked tanigue (Spanish mackarel) and cream cheese sandwiches, let me assure you that I didn’t throw them away. I didn’t feed them to the dogs or the cats either. I baked custard pudding.

And if you think that custard pudding is too plain and too ordinary, let me assure that plain and ordinary aren’t exactly in my cooking vocabulary. I stirred in half a cup of mango jam to the pudding mixture and the result is a richer pudding with a slight tartness that totally gets rid of the too-sweet sensation that most puddings impart.

Serves 4, using 4 ramekins with a 1-cup capacity

Ingredients:

2 c. of cubed day-old bread or bread crusts (I recommend half-inch cubes)
3/4 c. of milk (whole or skim, depending on your health requirements), the pour and drink kind
1/2 c. of sweetened condensed milk
1/4 c. of mango jam
2 large eggs
butter, for greasing

In a bowl, beat the eggs with the milk, condensed milk and jam. Add the bread. Mix well. Soak for at least 30 minutes.

Butter the bottom and sides of the ramekins.

Divide the bread mixture among the ramekins. Bake in a preheated 375oF oven for 30 to 35 minutes or until puffed and the tops are lightly browned.

Serve warm or chilled. They’re good either way.

    I need to eat that too. I am not contented just looking at your mouth-watering pudding, pity on me. My oven is still down and I think it is not going to work anymore. I really need to buy one so I can try all your baking recipes. Which will you recommend a turbo broiler or counter top electric oven? (space constraint) Please help me…

    If not using a ramekin, what size pan will I need for this recipe?

      Something with a capacity of 4 cups or thereabouts. Too large and the pudding will be too squat. Too small and the pudding might not get cooked through at the center.

    This is another good recipe. Tried this today and baked two pans- a regular size for dinner and a small ramekin for my instant taste test. Wow! This will really satisfy Raymund’s love for dessert and anything sweet.
    P.S
    I added i/2 cup of orange liquor becasue I wasn’t sure about the mango jam i bought- It gave the pudding an adult edge hehehe.

    Well, Raymund decided to play with his dessert tonight. He cut a piece of the pudding, poured some brandy on it then lit it up with a match. What a spectacle! The he said he cannot taste the mango flavor very well so he added some mango ice cream on top. Talking about sweet over sweet. I’m glad he is not diabetic-YET.

    Thanks for the nice complimnet but i am pretty sure Raymund and I are both older than you hahaha. By the way, we had unexpected company Thursday night and i served them the rest of the pudding(without the brandy and the flames) They really loved it- best bread pudding according to them. YEHEY!

    Dear Ms. Connie,

    As I mentioned in my post under toasted bread cups, I used the crust to make this recipe.

    Instead of mango, I used apricot jam. I am not sure if the one we have here tastes as good as we have in the Phils. Just to be safe, I tried the apricot.

    Again, it’s a hit. I really don’t think any of your recipes will be a miss… :D

    I used 2 loaf pans instead of ramekins.

    My boyfriend loved it…his lunch for today.
