Custard pudding with mango jam » Step 1

In a bowl, beat the eggs milks and mango jam. Add the bread. Allow to soak for at least 30 minutes. Soaking allows the bread to absorb the liquids. That’s really why bread crusts and day-old breads are ideal for making pudding — they’re drier. Newly baked bread is too soft and moist, will not soak up a lot of liquid, and will not give the pudding the ideal volume.
