Bake in a 350F oven. For small baking projects, I use the turbo broiler these days because it doesn’t require preheating and consumes less power. Imagine how much power a regular oven will consume to bake four single-serve puddings? Yeah, right.
So, that’s how the puddings look after 20 minutes in the oven. They will rise and there’s a point when they seem to be floating. The boiling butter is responsible for that. Once you take the ramekins out of the oven, the pudding will settle down. At this point, the tops of the puddings are somewhat browned but they really need another 10 minutes to acquire the right texture and color.
