Fried suman & fresh mangoes

November 19, 2009 • Hello. I am currently out of the country and unable to respond to comments and e-mails. Rest assured, however, that future posts have been scheduled so new recipes will go live almost everyday during my absence. I'll be back soon with lots of stories and photos. Ciao for now! ~ Connie

A rice delicacy, suman is steamed glutinous rice, sweetened or unsweetened, wrapped in oiled coconut or banana leaves. The suman in the photo in this recipe is an unsweetened variety, wrapped and tied with strands of coconut leaves. You cut a piece, dip it in sugar and eat it. At least, that’s the traditional way of serving suman.

Fried suman & fresh mangoes

Let’s get a little radical… ever tried fried suman with fresh ripe mangoes? No? Aahhh… you’re missing a lot…

Ingredients :

4 pieces of unsweetened suman in coconut leaves
1/4 c. of butter or margarine
2 fresh ripe mangoes

Cooking procedure :

Over medium-high heat, melt butter or margarine in a non-stick skillet. When butter or margarine starts to clarify, lay suman pieces side by side on skillet. Make sure you leave room to roll them while frying. Fry suman until golden brown and rice grains are puffed. Serve with sliced fresh ripe mangoes.

Hi Ate con! I like the thought of calling you ate coz I’ve been cooking your recipes a lot and I feel like you are part of my family.

Anyway, I just wanted to Congratulate you for upgrading your site with new ones. All of them are great!

Also, I want to comment on the Fried sumad w/ Fresh Mangoes. It is actually, me and my mom’s fave dessert. It is usually served in Iloilo, where I am from.

Fried or not, suman is still a great accompaniment with Fresh Delicious Guimaras Mangoes topped with a sprinkle of Dark Brown Sugar!

Janey, I don’t think we’ve had fried suman in the house since this entry was posted. So, I’m gonna ask my hubby to buy suman and mangoes on his way home from work. I want them for breakfast tomorrow. hehehe

Miss connie, pwede pong magtanong? baka alam niyo po iyong isang type ng suman na dini-dip sa isang klase ng matamis na sauce? not chocolate more like matamis na bao pero iba po? I`m trying your suman recipe and medyo madami kasing banana leaves dito so i`m planning to share na lang po with friends and i thought it would be fun to have different varieties kahit sa sawsawan.
Thanks for the recipes. I`ll definitely include this fried suman sa gagawin ko^-^
