How to buy fresh fish » Butterflied mudfish

Although it isn’t anymore unusual to find tanks of fresh fish and shellfish in supermarkets, in my experience, supermarket employees (who are not exactly in the fish business) aren’t very good with fish cleaning and preparation. Butterflying a whole fish, for instance, is unheard of with many of them, their skills usually limited to scraping off the scales, removing the gills and cutting the fish into portions.
I bought this butterflied mudfish (dalag) from the Taytay market and I must say that the preparation was wonderfully done — even the fish roe was intact.
