Lasang Pinoy 7 : Potato omelet

Because I feel so bad about not having been able to submit an entry for Lasang Pinoy 6, the pulutan edition, I am posting my entry for Lasang Pinoy 7: Gising na! ALMUSAL! (Wake up! Breakfast time!) a full 16 days before the deadline. It goes without saying that I don’t ever want to miss another Lasang Pinoy event again.
Cooking potato omelet, or itlog na may patatas as we called it when we were kids, was something I learned from my father just as my husband learned it from his. Of course, my father’s version was much, much more oily; there were no non-stick pans when I was a kid.
I don’t know what it is about the combination of crisp fried potato cubes and scrambled egg that makes it such a hearty breakfast. I always thought that it was the happy childhood memories I associated it with that made it special. After all, it’s really quite a plain dish. Well, that theory sufficed until I had kids. The moment they tasted itlog na may patatas, they were hooked. They even have specifications for cooking it: not like a “real” omelet but stirred just as soon as the scrambled eggs start setting. With buttered pan de sal or, better yet, pan de sal and quesong puti (white cheese), it’s the perfect breakfast for a lazy Sunday morning.

on a trip on one of his many yachts a chef prepared an omelette
the tycoon suddenly stood up and demonstrated how he would cook one
the chef was perplexed saying “sir its exaclty how i did it”
to which Onassis replied “yes, but your life didn’t depend on it”

I have planned the same entry! We love this combination too. Well, my kids and I. Hubby thinks it’s weird. He’ll eat scrambled eggs and hash browns, but won’t eat it if they’re cooked together. Go figure!
Miss reading your blogs. I’m still here in Manila. Yesterday was so hot and humid walking around Binondo. I miss the cold weather and the snow this time of the year. Talk about breakfast I have hot pan de sal, hamon, fried tikoy, left over butsi, suman sa ibos and hot arroz caldo with “mata ng baka”. What a life!
Oi! You made me hungry with memories of having this for breakfast. Dagdag pa ang kesong puti at pandesal! Ayayay! I’ve forgotten about making potato omelets altogether. Thanks for reminding me!

The potato omelette we grew up with was different. My Fil-Am children raves and orders it all the time! We “julliene” cut the potatoes and cook them just like fries. And this is a true “omelette” stuffed with the potatoes and cheese (cheddar if you have it). Serve with rice! Yummy! Try it you’ll be hooked too! They should have renamed the recipe posted above as “potato scramble” not omelette.

Tried this out for breakfast just now and it was a hit (again^^ because your a fantastic cook and an angel for sharing your recipes)!! Made some additions though, sliced bacon, dried parsley, cheese and drizzled parmesan on top.

It’s comfort food and I didn’t realize how good these two ingredients were together until we made them recently.
Didn’t really have these as a child, but my nephew and niece loved it when we cooked our tortilla de patatas.
