Lety’s ube – macapuno pie and espasol

Lety's ube-macapuno pieAfter a trip to Los Baños and Calamba last year, I posted an entry about The Original Buko Pie. At least two people commented that although fans of The Original Buko Pie may find it rather heretic, Lety’s buko pie was actually better. Unfortunately, the entry, along with the comments, disappeared when I had database troubles last December. I have since reconstructed the original buko pie entry but I have no way of recovering the comments. At any rate, I distinctly remembered that Lety’s was mentioned.

Now, I am a big fan of The Original Buko Pie, but I am not stupid. If there’s something better, I will say so. I had been dying to go back to Laguna to find Lety’s but schedules have not permitted me that luxury. Fortunately, I have since discovered that Lety’s has an outlet–a stall, actually–at the SM Megamall Food Court. Imagine just how pleased I was to find it. Finally, I could try what more than one reader, and true-blue Laguna natives, recommended. That’s Lety’s ube-macapuno pie in the photo and it was just divine. Simply divine!

For non-Filipinos, ube is purple yam, often boiled and grated then mixed with milk, butter and sugar to make a jam. Macapuno is a variety of coconut with a soft, sticky and chewy meat.

The ube-macapuno pie was not the only product of Lety’s that I tried. I also tried the espasol.

espasolEspasol is a pudding (sometimes referred to as a cake) made with toasted rice flour, fresh coconut strips and coconut milk. This is one delicacy that I’ve been crazy about since I was a young child. My father would often bring home espasol in boxes and I would keep them refrigerated in Tupperware containers so that they would last for many days. But, of course, espasol is best eaten at room temeperature. Refrigeration makes them stiff and they’re really best when soft and chewy.

While most espasols are cylindrical, Lety’s espasol are flat and round, about 3 inches in diameter. I cut one in half for the photo to show the coconut inside. Just like the ube-macapuno pie, Lety’s espasol was just wonderful. I found a couple of espasol recipes online for those who want to try making them at home. It’s just so good to know that we don’t have to drive all the way to Laguna to enjoy them–SM Megamall is only 30 minutes away, sans traffic. Next time we’re there, I will try Lety’s buko pie and decide if it’s really better than The Original Buko Pie.
