Spaghetti with home made pesto

I know that carbs are anathema to people on low-sugar diet but I am really not a food Nazi. Our bodies need carbs; we just shouldn’t go overboard with it. I love pasta and I’m not giving it up. What I am more than willing to give up is all the meat in the sauce.

The easiest pasta dish to make is to simply toss hot cooked noodles with pesto — home made preferably. No meat, no saturated fat.

Seafoods, like fresh clams, are great with pasta too. The trick, of course, is to stop thinking that pasta sauce needs to be thick and fatty in order to be delicious. Adding red wine to your pasta sauce will even benefit your heart because of the resveratrol in it.

    Hi Connie.
    It’s healthier if you avoid eating the “white” carbs. Whole wheat, grains, are better. The carbs turn to sugar when processed by the body. It’s better to lessen or substitute. It took me a LONG while but I now eat brown rice and wheat bread.
