Meatballs stroganoff

I can give you the recipe in three sentences. Meatballs made with ground beef and finely chopped belly bacon, browned in a mixture of olive oil and butter, then simmered with sliced mushrooms in a sauce made with canned mushroom soup. Off the heat, sour cream is stirred into the sauce. The sauce is ladled on cooked spaghetti and the meatballs arranged on top. That’s not hard, right?

The recipe was given by my friend Melissa who also gave me the original Mango Royale recipe. She wrote it down after seeing it on a show in the Lifestyle Channel. Don’t know which show; we don’t get the Lifestyle Channel with our Dream Satellite subscription. Our agreement was I’d try the recipe and give her a feedback. The feedback is that my kids absolutely loved this pasta dish. And they’re not even fans of meatballs. What made them change their attitude towards meatballs was the chopped bacon in them. Made a lot of difference in the aroma, texture and overall flavor.

Let’s go over the recipe again. With more details, this time.

Ingredients :

225 g. of spaghetti
1/2 kilo of ground sirloin
1/4 kilo of belly bacon
1 can of mushroom soup (I used Campbells’s)
250 g. of fresh button mushrooms (you can use canned)
1 c. of sour cream
2 tbsps. of olive oil
2 tbsps. of butter
additional butter to toss with the pasta
salt and pepper to taste

Cooking procedure :

Cook the spaghetti according to package directions. Drain, toss with some butter and set aside.

Slice the mushrooms thinly.

Finely chop the (raw) belly bacon. Mix with the ground sirloin and form into balls about 2 inches in diameter.

Heat together the butter and olive oil. Cook the meatballs, in batches if necessary, until lightly browned. You won’t need a lot of oil because as the meatballs cook, the bacon will render its fat.

In the remaining oil, cook the sliced mushrooms for a few minutes. Pour in the mushroom soup. Fill the can with water and pour into the cooking pan. Stir well to blend. Return the meatballs to the pan. Cover and simmer for about 10 minutes. Turn off the heat. Taste the sauce and add salt and pepper to taste. Stir in the sour cream and adjust the seasonings again, if necessary.

To serve, place the cooked spaghetti on individual plates. Ladle the sauce generously over them. Top with meatballs.

    Not hard at all. This is one of the first recipes I cooked when I first lived independently. I first saw it in Nora Daza’s cookbook. And the Campbell’s Mushroom soup was the innovation I added because it was just so convenient.

    Fantastic! I love making meatballs and regularly make a huge batch to freeze. Then we use them in different recipes or just plain. This is something I am sure the gang at home will enjoy.     This sounds like my recipe for Meatball Stroganoff. Had my simple version since the early ’80’s when I was still a teen in highschool. Now that I’ve my own munchkins it would me my turn to please them as it pleased me. The kiddies do love this dish… with the exception of my youngest. She tolerates it…. That’s my gurl!:wink: Can belch it out from either sides! :grin:

    As a busy person, I only have a few ‘vices’ left, aside from drinking and smoking, eating is one of them, I stumbled upon this site because I want to prepare better recipes than they serve in restaurants and try filipino food(fusion with western influence). I will try this recipe this saturday and let you guys know. I like to introduce my wife to a number of delectable dishes – this could be one of them! If you guys can point me to the best beef tapa recipe, that would be awesome – something like RODICKS of U.P. would be nice or Tapa Queen taste (of Tapa King resto). BTW, I stumbled upon the best heart stopping, calorie laden, and mouth watering carbonara recipe – for Filipinos. Ill post it one time if you want to die young! Its a Killer!

I almost forgot this one…I tried your meatballs so easy and you are right….the kids will love it….My husband kasi loved the Italian sauce sauce spaghetti and one nagluto ako,,,,,,,,,yummy daw but he wants it with meatballs I searched the web super complicated ang mga ingrediets unlike yours….PERFECT and EASY! Saluto to you Mommy Connie! Your husband and kids are very lucky to have you! I hope my family feels the same way na rin sa akin….Bwahahhahaha!

    Hi Connie! I’ve been browsing your recipes archive and I saw this one. I have been dying to try this out. I’m just wondering why is it that another beef stroganoff recipe has tomato sauce & sour cream? Will the taste be same if I follow this one? Or this is the simpler version?

    KPR, tomatoes add color to stroganoff but make it a little more sour too. I don’t know if this is the simpler version. There are literally hundreds of versions of stroganoff and what’s simpler depends on the cook’s perspective.
