Mustard and mango jam turkey steaks
November 19, 2009 • Hello. I am currently out of the country and unable to respond to comments and e-mails. Rest assured, however, that future posts have been scheduled so new recipes will go live almost everyday during my absence. I'll be back soon with lots of stories and photos. Ciao for now! ~ ConnieMany residents of Antipolo raise turkeys. You can actually see the turkeys running freely on the streets. Not commercial turkey raising but for personal consumption. And these aren’t rich people. Some of these turkey raisers live in shanties. Guess turkeys are ordinary fare for them unlike us who have lived most of our lives in the city. Anyway, we were really supposed to buy duck but couldn’t find any. We’re not exactly turkey fans but when we chanced upon trays and trays of sliced turkey drumsticks at the supermarket, I immediately thought about half a dozen ways of cooking them. We bought a two-kilogram pack, the smallest, to sample the sliced drumsticks. Looks like we’ll be going back to the supermarket before the New Year for another pack or two. They were delicious!

The sliced drumsticks actually look like small slices of beef shanks, bone-in. They are about three-quarters of an inch thick and the bigger ones are five to six inches in diameter. A slice is just right for one person.
I cooked the sliced turkey drumsticks in a little water with salt and spices. I actually intend to cut the meat in cubes and make a turkey pie tonight for a dinner party we’re hosting (yes, again!). But my husband suggested we sample the sliced drumsticks first before serving them to guests. So, I took four slices, smothered them with a special sauce that I concocted then grilled them just until lightly browned. The meat was fork tender, the sauce was rich and lunch was just great!
