Mustard and mango jam turkey steaks

Ingredients :

sliced turkey drumsticks
1 whole garlic
1 whole onion
8-10 peppercorns
salt

For the mustard and mango jam sauce (for four steaks) :

2 tsps. of dark brown sugar
3 tsps. of prepared mustard
1 tsp. of coconut vinegar
2 tsps. of mango jam

Cooking procedure :

Simmer the sliced turkey drumsticks in a little water with the whole garlic, onion, peppercorns and salt. Add more water, a little at a time, if the liquid evaporates before the meat is tender. In my case, the meat was fork tender in less than an hour.

Drain the sliced turkey drumsticks.

Make the sauce by mixing all the ingredients together until well blended and the sugar is completely dissolved.

Smother the sliced turkey drumsticks with the sauce and grill in a 220oC oven for ten to fifteen minutes or until the meat absorbs some of the sauce and browns a little.

Serve at once.
