New Year’s Eve menu: chicken satay, pork teriyaki, potato salad and mango rum sorbet

Note that this is a suggested menu. We’re having roast duck for New Year’s Eve, a staple for the past so many years. The pork teriyaki and chicken satay were intended for a barbecue party that got cancelled and we had the grilled dishes for dinner at any rate. If the party had pushed through, these are the dishes that we would have served. Note too that the following menu is intended for adult diners. The chicken satay and grilled pork teriyaki were meant to double as a main dishes as well as pulutan.

For the teriyaki marinade, click here. That link is for the traditional chicken teriyaki recipe; just use the marinade on pork chops and grill the chops instead of cooking them on a pan.
The potato salad may be prepared using canned tuna, chicken or leftover turkey or duck.
(If you feel that you need a balance for all that meat, you may want to serve a leafy vegetable salad. Check out my vegetable and apple salad or the version with grapes and oranges.)

After such a heavy meal, I don’t think anyone would be interested in a heavy dessert. Go for something light like this mango-rum sorbet which can be prepared a day ahead.

Now, for the after dinner fare. Of course, beer would be a popular choice. But do try mixing some cocktail drinks for a change. Nothing too complicated and nothing that requires too many special ingredients. Maybe, some Margarita — with mangoes, watermelon or strawberries.

Too many activities this holiday season, i was only able to cook twice at home. I did a chicken teriyaki based on the one where you used Gin. Sarap!
