Pollo con queso

Before we moved to the suburb, my family frequented Shangri-La Plaza Shopping Mall in Pasig. There was a stall in the basement food court called Vincenzo’s and one of the dishes it served was pollo con queso, rolled chicken in a creamy white sauce. Vincenzo’s folded up a couple of years ago. I never thought much about it until a member in the discussion forum mentioned it. I was suddenly hit by nostalgia and I thought I’d try my own version of pollo con queso.
Vincenzo’s pollo con queso were bigger. Since I made mine with breasts of small chickens, they came out smaller. Vincenzo’s served pollo con queso with rice; I decided to serve mine with buttered pasta.

i tried this and made my own variation… i topped the dish with bechamel sauce from the recipe i got from the net.
the spiral pasta is a great choice
they catch the sauce well, don’t they?
