Smoked salmon and cream cheese canapés

Thinking of easy to prepare but delicious and memorable canapes for a cocktail party on New Year’s Eve? Try spreading this filling made with smoked salmon and cream cheese on wheat crackers. Or use it as a sandwich filling, cut up the sandwiches and serve as mini sandwiches. I love smoked salmon. So when I saw three different versions of this filling — in a cookbook, in a TV food show and in a website — I figured it must be a sign that I should try and make my own version.

The result was so good that even my daughters who are not particularly fond of smoked salmon have been snubbing the ham and cold meat in the fridge when they make sandwiches. Instead, they reach for the container with the smoked salmon and cream cheese filling. So, even if you’re not throwing a cocktail party, you might still want to try and make this delectable mixture as a standby sandwich filling.

Minced smoked salmon

Finely mince some smoked salmon (thawed to room temperature). How much smoked salmon? Equal to the amount of cream cheese that you intend to use. I had a whole 225 gram block of cream cheese, I so minced enough smoked salmon to measure one cup.

Finely sliced onion leaves

Then, you finely slice some onion leaves. How much? For a cup of minced smoked salmon, four to six tablespoonfuls is a good amount.

Place the minced smoked salmon and sliced onion leaves in a bowl…

Cream cheese

… and add the cream cheese. No need to have the cheese at room temperature.

Add cream

Add one-fourth cup of cream, two tablespoonfuls of lime, lemon or kalamansi juice, about a teaspoonful of salt and a generous amount of freshly ground black pepper. Mix everything together…

Mix everything until smooth

… Just keep mixing until no solid pieces of cream cheese are visible.

And that’s it! Take a teaspoonful and spread on wheat crackers to make fantastic canapes…

Use as sandwich filling

… Or spread on bread to make mini or regular sized sandwiches

    I haven’t tried anything with smoked salmon than to eat it as it is. Just like crabs and lobster, I don’t like them being made as ingredient for salad. I like to eat their meat from their shells after being cooked (steamed, poached, peppered, etc.).

    But I’ll try your recommendation. I’ll ask my CIC to prepare it based on your recipe. He he he.

    and may i add, i also your made baked macaroni, oh goodness they love it so much, my cousin thought i ordered it from a resto! kainis lang they charge $5 for kraft eden (magnolia, Ques-O) here, just a dollar cheaper than velveeta, although i still opted to use kraft eden maybe next time i’ll try it with velveeta and see the diff!

    jd, without a little cream, the mixture is too stiff for spreading or piping.

    y-anne, you can but it won’t take the same. The smoked flavor really does give this mixture its character.

    I’d like to try this Smoked salmon and cream cheese sandwiches!! Tamang-tama may in-order akong salmon fish (fillet) but not the smoked one, frozen sya. Ask ko lang kung may tip/trick ka to make a smoked salmon?
