Smoked salmon, lettuce and kesong puti (white cheese) salad
I just posted my second Lasang Pinoy 7 entry–kesong puti at pan de sal. No recipe in that entry but here is one using kesong puti inspired by a mozzarella and lettuce salad that Jamie Oliver did in The Naked Chef a couple of months ago.
I was in the supermarket earlier today and saw all those banana leaf wrapped kesong puti. A few freezers away was the smoked salmon. Between the kesong puti and the smoked salmon was the lettuce. A salad seemed like a great idea. I figured I could prepare just enough for myself and have it for lunch.
So, who says kesong puti is only good with pan de sal, eh?
Ingredients :
lettuce
a slice of smoked salmon
4 slices of kesong puti
juice of half a lemon
olive oil
herbed salt
How to make the salad :
First off, romaine and iceberg lettuce leaves are too thick and heavy for this salad (personally, iceberg lettuce ranks last in my list of preferred lettuce varieties). I didn’t want the smoked salmon and kesong puti drowning in a sea of lettuce. So, I suggest lettuce with very thin leaves. Coral lettuce or lola rossa (the kind with red leaves) would be good for making this salad.
Wash and drain the lettuce. Tear off the root ends and place in a salad plate. Tear the smoked salmon into small pieces and add to the lettuce. Do the same with the kesong puti. Squeeze the half lemon over and around the salad ingredients. Drizzle with olive oil (about one-eighth cup would be fine). Sprinkle with a little herbed salt.
Dig in and savor the wonderful flavors.
