Stir fried chicken, almonds and skiitake mushrooms » Step 1

If you have chicken thigh fillets, just cut each into bite-size pieces. It’s been a headache finding them in supermarket for the last couple of months so I used the bone-in thighs in the freezer. I simply deboned them and reserved the bones for making soup at some future time.
