The immortal baked mac and all things cheese

Everyone in my family is a cheese lover and we have at least three varieties in the fridge at any given time. Right now, it’s mozzarella, Monterey Jack and medium cheddar. Add to that the Bega cheese sticks and the jar of Cheez Weez. For us, cheese is a sandwich filler, a base for a spread or dressing, a topping for pasta, a topping for plain toast and an any-time snack. What is it about cheese that makes it irresistible to kids and adults alike? The creaminess? The melt-in-the mouth sensation? The gooey stickiness when it’s melted? For whatever reason, cheese seems to be popular all year ’round. I’ve compiled four photos contributed by four different readers to include in this very cheese-y entry.

Salmon and cream cheese on crackers

First, Dolly from New Zealand made the smoked salmon with cream cheese spread and she says it’s great with Sky Flakes (see photo above).

Next, we go to what is probably the most-tried recipe in this blog — baked macaroni with creamy cheese topping.

Baked mac for the New Year

Let’s start with Phynkee who baked a lot of macaroni for their New Year’s eve party. She’s made this dish so many times already. View her comments and more baked mac photos.

Marie from Abu Dhabi’s version is above and she says, “This was such a hit with my cousins… I thought it will be wasted since I thought the cream topping was a little starchy but what can I do they simply loved it and was begging me to cook again. I paired it up with French bread topped with softened butter with minced garlic.”

    Thanks connie for posting my picture! i can’t wait to show this entry to my hubby! hehehe :) He knows i’m so attached to your site that all my cooking ideas were taken from here…i even have a compilation of the recipes i printed from your site. whenever i can’t think of anything to cook, i just ask my hubby to check my compilation of your cooking and choose whatever he wants me to cook.
    This site is really a big big help to me…it’s like your an angel sent from heaven. (too mushy already)i’m just so thrilled with this new idea of yours (posting pictures of your readers’ “pinoycook” inspired cooking) now i’m not just a reader of this food blog …i’m now part of Pinoycook!

    I maybe nitpicking, but I think the picture is that of baked macaroni with cheese which is very different than macaroni and cheese. But from where I seat, it looks yummy. mac and cheese ar comfor foods for us here in the states, but I make a mean baked macaroni with nestle cream which is cooked in a different way than mac and cheese.
    even at KFCs you get Mac and cheese as sides instead of cole slaw, do they do that in MNL also now?

    also the smoked salmon in cream cheese is a regular fave schmear of bagels here in Boston or NYC.although I like whitefish on my bagel which is like tinapa shredded with a little mayo. ohhhh, now I want to go to NYC for the bagels and whitefish. maybe this weekend.

    My daughter is asking me to cook baked mac for her. Problem is we don’t have an oven. Can I use turbo broiler ?

    I agree the baked macaroni is immortal…My fiance told me that he won’t eat any other baked mac ever again unless its mine..Thank you so much :)
