Vegetable and Apple Salad

Ingredients :

350 g. of green leaf lettuce
1 green bell pepper
1 cucumber
6 tomatoes
1 apple
1/4 c. of kalamansi (native lemon) juice
1/8 c. (or more) of white sugar
1 tsp. of ground black pepper
1/8 c. of olive oil
1 tbsp. of finely chopped parsley

Cooking procedure :

Wash all the vegetables.

Tear off the root ends of the lettuce. Break each leaf into two. Arrange on a salad bowl.

Core and seed the bell pepper. Cut into 1/4″-wide strips.

Peel the cucumber and cut into 1/4″-thick rings.

Cut the tomatoes into quarters.

Peel and core the apple. Cut into 3/4″-cubes.

Arrange the bell pepper strips, cucumber slices, tomato quarters and apple cubes on top of the lettuce leaves.

Mix together the kalamansi juice, olive oil, sugar, pepper and parsley. Use more or less sugar to suit your taste. Drizzle the dressing on the vegetable and apple mixture. Toss well.

Serve at once.

    Is there a substitute for parsley that you can suggest? I dont think i’ll find it pretty easily here and I really want to add more fruits and vegetables to our diet

    You can just omit the parsley, Alexie.
