Waldorf salad

Despite the five-star name, there’s nothing hoity-toity about Waldorf salad. It’s easy to prepare using very basic ingredients. Oh, okay, walnuts may not be a basic item in the average Asian kitchen and they are a bit expensive in this part of the globe too, but… Did you know that you can buy walnuts by the gram in supermarkets these days? Buy only what a dish requires and you need not spend a fortune buying more than you need.

Traditionally made with apples, celery, walnuts and mayonnaise, I added diced chicken to my Waldorf salad to make it more appetizing for my very carnivorous husband. Without the chicken, I doubt if he would have touched it.

Serves 2 to 3.

Ingredients:

2 eating apples, peeled (or not), cut into 3/4-inch cubes and tossed with 2 tbsps. of lemon or lime juice
100 g. of walnuts, lightly roasted and very coarsely chopped
3/4 c. of diced cooked and seasoned chicken meat (mine was boiled but you can try grilled or broiled)
1/4 c. of diced celery
1/4 to 1/3 c. of mayonnaise
freshly ground black pepper
lettuce, to serve

Just toss everything together and serve on a bed of lettuce.

And that’s the shortest recipe I have every posted in this blog.

    I am an Administrator for an engineering multinational and i work with engineers housed in shared accomodation. My office sits below two Filipino engineer’s apartment, and everyday, i get great smells of food. So today, i went over for lunch and asked how they cook their food…so they gave me a few recipes and directed me to this website…and the waldorf salad was the first recipe i came across, and am so happy! Thank you!

    I make myself waldorf salad every sunday for consumption for the entire week. I love walnuts but because it’s expensive, I use cashew nuts instead and if i don’t have apples, pineapple tidbits will do.
