I'm in a sort of transition though from electric (convection) oven to gas. Gets a little getting used to. Exhaust. We have a ceiling type exhaust fan (between the range and the prep sink) that is connected to a tube inside the ceiling with a vent on the wall to blow off the heat. Pretty good, peasmom.
